Charles M. Barnard's Chocolate Chip Cookies

Take the standard Toll House® chocolate chip recipe (or another, I often use the one from The Joy Of Cooking.)

Double the recipe, except for the chocolate chips. Increase the number of eggs by 1 (for a more cake-like cookie.)  

add:

    1/8 teaspoon cayenne pepper

    1/8 teaspoon cinnamon powder

    1/4 teaspoon orange or lemon extract
